We use lean muscle meats, make small batches fresh every day and never compromise our quality. 

The Butchery Block was founded in 2018 by Shane Wolbaum. The idea to start the business was spurred on by rave reviews from family and friends who had sampled a homemade batch of sausage that Shane made from recipes and hand crafted meats passed down for three generations. With a recipe in hand and ambition afoot Shane leased a building in Cochrane, Alberta and began to produce sausage with a hand-crank grinder and stuffer. Shane pursued this path and completed the Butchery and Charcuterie course at SAIT in 2019. The rest, as they say, is history.

Over the years, the production equipment has become more advanced and the product line and services have grown, but The Butchery Block is still operated with the same values and passion that Shane had at the start.
